The story goes that an Auvergnat farmer sprinkled mold from rye bread on his milk curd and then pierced the curd with a needle. This allowed the air through and the curd developed blue veins. Texture: The pate is uncooked and not pressed, with a sticky, moist and crumbly texture and veins of blue mold. Taste: The smell is strong and attests to its pungent taste. The Only BleuOct 30, 2010

This is the only bleu I will eat. From the first moment this wonderful cheese crossed my palate I have found all others lacking. Full flavored and earthy pairs well w/pear and apple. While a full bodied red wine is often suggested I prefer a rose` myself.
